Spinach and Mushroom Omelet
Ingredients:
- 1 cup of fresh chopped spinach (it will wilt down to almost nothing)
- 1/2 cup of mushrooms chopped (I used baby portabella)
- 1/4 cup (or less) Italian cheese (or cheese of your choice)
- 1 egg (or 2 if you want)
If you aren't already, get in the habit of eating breakfast, it makes such a difference, and it has been proven that you will consume less calories the rest of the day compared to if you didn't eat breakfast.
Other breakfast options include: yogurt, granola (I prefer homemade--I need to post that recipe), cereal (even though it doesn't keep me full)...
